The high protein and nutrient contents of meat is a natural media for microbial and bacterial multiplication. The selected heat treatment applied shall therefore be carefully designed and preserve flavors, colors and organoleptic qualities, and  packaging integrity as well. Often, the cooking value will also be a goal of sterilization/pasteurization/canning.
We therefore generally recommend a static heat treatment with additional cooling. Our Air /Steam and Water Spray process are most suitable to the heat treatment of such food product, regardless of their packaging. And we have exclusive patents which you can use for continuous pasteurization, including for the most fragile flexible packaging.
